Grain-Free Comfort Food?

Hello everyone!




I am always trying to read up on things grain-free, and while chatting with a friend of mine about a book she had seen for vegan comfort food, the lightbulb went off in my head- Are there Paleo (dairy/legume/grain/gluten-free) comfort food books as well?


So, I went to my good old friend Amazon.com and typed in the search line "Paleo Comfort Food".


And then I got directed to this title:




The good thing about this is that the recipes are free of anything I don't want to eat- grain/beans/dairy.  I downloaded the ebook to my Kindle Fire and I will be going over it during the weekend and let you guys know how it is.


My gluten/grain free ladies (and anyone else) any good websites, books, etc for gluten free recipes? Post below!

Wheat-Free Recipes!

Hello everyone! 


Today I was cooking some Korean food today and it was a dish that USUALLY has wheat snuck in or is part of one of the main ingredients.  I made a wheat free version today that tastes just as good!




Rice Cakes in Hot Sauce (떡 볶이) This dish is commonly served as street food in Korea as a yummy spicy-sweet snack. AND it is very easily made gluten/wheat-free!





What you need (PAY ATTENTION TO THE NOTES BY INGREDIENTS. Remember to always read ingredient labels since brands and selection DO vary)


Serves 4-6 people depending on appetite


1 bag of Korean rice cakes (Make SURE that the ingredient list does not say "wheat starch" or anything- They ideally should be made of Rice, Salt, and possibly some kind of alcohol to dry them for shipping. They come in a variety of shapes but traditionally this dish is made with more cylindrical shaped ones. It's a matter of preference! Gochujang (Hot pepper paste)- Make sure the ingredients do not include wheat flour- choose the kind made with glutinous rice only!  I did not list an amount because this is to taste.  Usually I use about 6 tablespoons but I like mine HOT.


Tamari Soy Sauce- this is wheat free and also to taste. You will not need very much.


Brown sugar or sugar- about 4 Tablespoons or more if you like it sweeter.


Garlic or Garlic Powder- to taste- I like mine very garlicky


Odeng or Korean fish cakes- I do not use these because I have a fish allergy but traditionally these are included.


1 medium onion cut into slivers


Green onion for garnish


1 hard boiled egg cut lengthwise for garnish






Instructions:


1. Pour rice cakes and onion slivers into a large skillet. Pour enough water over them to cover.  Cook until almost boiling and the rice cakes are soft.  If there is still a lot of water in the pan by now, drain some off until it's as wet as you'd like.  Water doesn't have to cover the cakes at this point.


2. Add gochujang (at least until the remaining water is red) stir well.  When adding soy sauce you should only add enough to make the sauce slightly darker in color.  When adding sugar, taste a little each time you add some so you can adjust for taste, same for the garlic. Stir very well after adding each seasoning.  Also add the fish cakes at this time if you are using them.


3. Continue to cook for 2-3 more minutes on boil or until onions are tender and fish cakes are hot. Sauce will thicken a little. Serve with sliced green onion and a hard boiled egg on top.

Even more good news

Hello everyone!


Earlier today I was mentioning the good things happening to me- not losing much of my results, feeling better, etc.




I also heard more good news today.


One of my good friends has a young sister who is very obese, and has been for quite some time.  I haven't talked to this friend in a while and I heard some astonishing news.


In 3 weeks, her sister lost 20 pounds and went from having a blood glucose level of 300 to 120. IN THREE WEEKS with no exercise.


What went right? Her mother stopped feeding her grains and keeps her on berries, yogurt, meats, and vegetables. 


She now says she is not as hungry as she used to be (this was a kid who would CONSTANTLY want food), more energy to play, and feels much better in general.


I am so proud, she inspired me to take grainless-ness by the balls again (lately I have been dipping into them) and show my wheat belly who's boss, or as my other friend put it- hop on the No-Grain Train.

More on the pregnancy workouts

Hello everyone!

I had a really busy Saturday- no workout but I did walk a lot. My foot is feeling much better, now I am waiting anxiously for my new shoes to get here on Monday. Quickie post today.

In other news, Tracy posted some more pics on Facebook concerning her pregnancy workouts- this time photo shoots for what I believe will be for the cover/advertising part.   I think she looks cute pregnant- I think she is currently 6 months along.




I am really excited for these workouts to come out even though I am not pregnant.  If I were, or if I ever do become pregnant, I would like to give these a try.  How about any of you guys?  If you happened to be pregnant after these videos become available, would you try them? (Of course, if your doctor clears you for it)

I also have been in the process of looking for grain free recipes.  I decided to try going grainless again (after the great results I got from doing it before) and I am trying to figure out ways to make it affordable and have some variety in it as well.  

Not sure if I will be able to get a workout in tomorrow, but I will do my best. Have a great weekend!

Much Easier Said Than Done

Hello everyone-




I think I posted in a previous entry that I found out that I am allergic to wheat and fish and that I am lactose intolerant.  This means I basically cannot eat wheat, fish, and milk.  Easy, right?


No. Not easy at all. 


The easiest one to kick- fish.  I have never been a big fish eater, like ever so that's a no brainer.


Milk- Not so easy. Why?  I love my Starbucks Frappucinos. Sadly, even if you ask for soy, there is still a little milk in it. (I think). Also I like my cheese.  This one isn't quite so bad because I do not have dairy often.


Wheat- Oh wheat, you rascal.  You taste divine, you make baked stuff nice and fluffy and full of doughy goodness, and you bloat me bigger than the Goodyear fucking blimp, make me want to hit the bed 10 minutes after eating you, and live on the fucking toilet.  And yet it's so hard to kick you out of my life for good. Why? BECAUSE YOU ARE IN PRETTY MUCH EVERYTHING. Having to avoid pretty much anything, even the things one wouldn't expect you in SUCKS. Thanks a lot, jerk. 


So yeah. I have not been having a fun time with this.  As for the celiac tests I took last week, I still await the results.  If I DO end up having celiac, I have to be even more strict about what goes into my mouth.  When you have to eliminate so many foods from  your life all at once, be it for an allergy or any other reason, it's HARD.   It's very difficult mentally to see your friends and family eating "normally" while you can't. It's hard when there are office parties and you can't have anything because it's all loaded with wheat. 
I honestly feel like a fat rabid swine drooling over things like pizza, etc that I cannot have, not because I am trying to lose weight per se but because of allergy. 


Have any of you guys had to go from one extreme to another dietarily and how did you cope with it?
